at the farm

Chef Aaron has created an exceptional tasting menu to tantalize your
taste buds. Dexter's are a very old Irish cattle breed, in a new market.
Naturally tender and lean, high in Omega 3 and Omega 6 fatty acids.
Farm raised, grass fed, grain finished USDA inspected, natural beef that
is raised and finished here at Windswept.
Dexter beef is available for purchase in half or whole finished cut and processed. We will also have ground beef, Irish sausage (bangers), breakfast sausage and special packages of steak and/or roasts at the event.
The tasting menu:
Oxtail Soup: Fresh Dexter oxtail braised slowly in a red wine and pepper demi-glace.
Carpaccio: Thinly sliced Dexter tenderloin, dressed in a lemon and garlic vinaigrette and finished with a baby arugula salad.
Dexter Sliders: Fresh Dexter ground beef topped with Bleu Marrow Butter and mixed greens on a toasted potato roll.
Braised Short Ribs: Oven roasted Dexter short ribs in soy sauce and local lavender honey, and caramelized on the grill.
Rosemary Prime Rib: Dexter prime rib loin encrusted in garlic and fresh rosemary, then smoked rare and served with a smoked shallot au jus.
Irish Stew: Slow simmered chunks of Dexter steak with carrots, onions and potatoes smothered in a dark, rich gravy.
Dexter Wellington: Dexter tenderloin stuffed with duxelle and topped with a flaky puff pastry crust and served with whole grain honey mustard.
Osso Bucco: Cross-cut Dexter hind shanks roasted with fresh herbs, red wine and garlic. Simmered to fall off the bone. Complete with garlic crostini to spread with marrow.
